
About this recipe
This is tuna salad without mayo. Lemon, olive oil, and olives do the dressing work, and cucumber keeps every bite crisp.
Drain the tuna well so the bowl stays bright instead of watery. It comes together in about 12 minutes with no stove.
Pack well for meal prep. Keep the tomato separate if you want maximum crunch the next day.
PREP
Step 1
Drain tuna well and flake into a large bowl.
Step 2
Add cucumber, tomato, olives, and red onion if using.
DRESS
Step 3
Drizzle with olive oil and lemon juice. Sprinkle oregano, salt, and pepper. Toss gently until coated.
Step 4
Fold in parsley if using. Taste for salt and lemon. Serve cold.
Tips
Tuna packed in olive oil is richer. Drain well and cut the added oil to 1 tablespoon.
Serve over greens if you want a bigger plate without many more calories.
