Turkey and avocado wrap cut in half with greens

About this recipe

Turkey and avocado in a wrap is the lunch you make when you want something fresh without turning on the stove.

Four wraps take about 10 minutes. Mash the avocado with mustard so it spreads in one layer and holds the greens.

Warm the wrap briefly if it feels stiff. A pliable tortilla rolls tighter and leaks less.

  1. PREP

  2. Step 1

Mash avocado with mustard, a pinch of salt, pepper, and lemon juice if using until spreadable.

  3. Step 2

If tortillas feel stiff, warm each one 10 to 15 seconds in the microwave or in a dry skillet over medium until pliable.

  4. ASSEMBLE

  5. Step 3

Spread a quarter of the avocado mixture over each tortilla, leaving a 1-inch border.

  6. Step 4

Layer about 3 ounces turkey and a handful of greens down the center. Fold in the sides, roll tightly, and slice in half if you like. Serve immediately or wrap for later.

Tips

  1. Pack avocado mash and greens separately if prepping more than a day ahead so the wrap does not go soggy.

  2. Choose a thinner wrap when you can. Thick burrito tortillas add a lot of calories for the same filling.
