About this recipe

A taco bowl without the shell. Seasoned turkey, beans, salsa, and cool yogurt over crunchy lettuce.

Four bowls come from one skillet. Keep the turkey breaking into small pieces so every bite gets seasoning.

Build the bowls just before eating so the lettuce stays crisp. The turkey mix meal-preps well on its own.

  1. COOK THE TURKEY

  2. Step 1

    Heat olive oil in a large skillet over medium-high. Add turkey and salt. Cook, breaking it up, until no longer pink and lightly browned, 6 to 8 minutes.

    Stir in chili powder, cumin, and garlic powder. Cook over medium-high until fragrant, 30 to 45 seconds.

  4. Step 3

    Add black beans and half the salsa. Reduce heat to medium. Cook until hot and slightly thickened, 3 to 4 minutes.

  5. ASSEMBLE

    Divide lettuce among four bowls. Top each with a quarter of the turkey mix, remaining salsa, and 2 tablespoons yogurt. Add tomatoes and lime if using. Serve right away.

Tips

  1. Drain excess liquid from the pan before adding spices so the seasoning coats the turkey instead of watering out.

  2. For meal prep, pack turkey and beans separate from lettuce. Assemble when you eat so the greens stay crisp up to 4 days.
