About this recipe

Ground turkey takes taco seasoning quickly, and the skillet stays lighter than a beef version without tasting lean or dry.

Peppers and onion soften in the same pan. Beans or corn stretch the pot so leftovers cover another lunch.

Serve in bowls with salsa on top, or spoon into lettuce cups if you want fewer carbs.

  1. BROWN THE TURKEY

    Heat olive oil in a large skillet over medium-high. Add turkey and salt. Cook, breaking it up, until no longer pink and lightly browned, 6 to 8 minutes.

    Stir in chili powder, cumin, and garlic powder. Cook 30 to 45 seconds over medium-high until fragrant.

    Add onion and peppers. Cook over medium-high until softened and lightly charred at the edges, 5 to 7 minutes.

    Stir in black beans, salsa, and corn if using. Reduce heat to medium. Simmer until thickened and hot, 4 to 5 minutes.

    Taste for salt and spice. Serve in bowls. Add extra salsa at the table if you like.

  1. Drain turkey fat if your skillet looks wet before adding spices so the seasoning sticks.
