About this recipe

Salmon bites cook faster than whole fillets and pick up more browned edges. Lemon, garlic, and a little oil are enough seasoning.

Cut pieces similar in size so thin scraps do not dry out before thick cubes hit 145°F.

Serve with a simple salad or steamed vegetables if you want more volume on the plate.

    Pat salmon dry. Toss with oil, lemon zest, 1 tablespoon lemon juice, garlic, salt, pepper, and paprika if using.

Tips

  1. Leave space between pieces. Crowding steams the salmon instead of crisping the edges.

  2. If using skin-on salmon, cut skin off first so the bites brown evenly on all sides.
