
About this recipe
Cubed steak browns on more surfaces than a whole steak, so you get crusty edges in under 15 minutes of cook time.
A small knob of butter at the end is enough. The garlic blooms in the residual heat and coats every bite.
Broccoli cooks in the same pan after the steak rests. One skillet, one dinner.
SEAR THE STEAK
Step 1
Pat steak cubes dry. Season generously with salt and pepper.
Step 2
Heat olive oil in a large skillet over medium-high until shimmering. Add steak in a single layer (work in two batches if needed). Sear undisturbed 2 to 3 minutes.
Step 3
Flip and cook until browned on most sides and medium in the center (about 135°F), 2 to 3 minutes more. Transfer to a plate.
BROCCOLI AND FINISH
Step 4
Add broccoli and 2 tablespoons water to the same skillet over medium-high. Cover and steam-sauté until bright green and tender-crisp, 3 to 4 minutes.
Step 5
Lower heat to medium-low. Add butter and garlic. Stir 30 to 45 seconds until fragrant. Return steak and any juices. Toss 30 seconds to coat.
Step 6
Taste for salt. Squeeze lemon over the pan if using. Serve hot.
Tips
Crowding steams the steak. Two quick batches beat one gray pan every time.
Green beans work instead of broccoli. Same steam-sauté timing.
